This drink was born at the 2025 drinks fair in Gothenburg. A perfect summer drink with elderflower, strawberry and, of course, Summer Gin 2025. Works as a single drink or as a punch for midsummer or the party.

Ingredients

  • 1 part Skrea Backe Summer Gin 2025
  • 1/2 part elderflower syrup* — a good shop-bought elderflower cordial also works
  • 1/2 part strawberry syrup** — a good shop-bought strawberry cordial also works
  • 1 part lemon or lime juice
  • Basil
  • Elderflowers
  • Strawberries
  • Sparkling water

Method

  1. 01Pour all the ingredients into a jug or a glass
  2. 02Add ice, strawberries, elderflower and basil
  3. 03Top with sparkling water
  4. 04Stir well

Other instructions

Elderflower syrup*

  • 10–15 elderflower heads
  • 50 cl sugar
  • 50 cl water
  1. Bring the sugar and water to the boil
  2. Pour over the flowers and leave for 1–3 days
  3. Strain

Freezes well.

Strawberry syrup**

  • 250 g strawberries
  • 50 cl sugar
  • 50 cl water
  1. Bring the sugar and water to the boil
  2. Drop in the strawberries
  3. Blend and strain
