Skrea Basil Smash
Here we took our cue from a classic gin basil smash. To make it that bit more special we top it with David Kringlund's elderflower foam. A summery, herbal drink, perfect after a day on the beach.

Ingredients
- 5 cl Summer Gin 2025
- 3 cl lemon juice
- 2 cl sugar syrup, 50/50 sugar/water
- 10 basil leaves
- Elderflower foam*
Method
- 01Put everything except the elderflower foam into a shaker
- 02Shake with ice until well chilled
- 03Strain into a suitable glass
- 04Top with the elderflower foam

David Kringlund's elderflower foam*
- 40 cl elderflower cordial
- 10 cl egg white
- Mix the egg and elderflower cordial
- Add to a siphon and charge with two cartridges
- Keep it cold for the best foam
