Skrea's Liquid Crayfish Party

The perfect aperitif for the crayfish party! Akvavit works wonderfully in drinks — like a gin, it carries flavour, unlike a vodka. This drink is a little more advanced and needs a siphon, but it is fantastically good and a fun one for the crayfish party.

Ingredients

  • 5 cl Skrea Backe Akvavit
  • 2 cl cucumber juice (blend cucumber and strain)
  • 2 cl lemon juice
  • 2 cl crown dill syrup*
  • Crown dill foam** to top

Method

  1. 01Combine everything except the foam in a glass with ice
  2. 02Stir
  3. 03Top with the crown dill foam

Other instructions

*Crown dill syrup

  • 500 g sugar syrup
  • 500 ml water
  • 10–20 crown dill heads
  • 1 slice of lemon
  1. Bring the sugar and water to the boil
  2. Pour over the dill and lemon
  3. Chill for a day and strain

Freezes well.

**Crown dill foam

  • 10 cl egg white
  • 40 cl crown dill syrup
  1. Mix the syrup and egg white
  2. Add to a siphon
  3. Charge with two cartridges and shake
  4. Keep refrigerated for the best quality
